Corn and Bean Tacos


Ingredients:

Two cobs of corn 

Two can of chili beans 

One green pepper - finely chopped 

Half a white onion - finely chopped

One clove of garlic - grated

Juice from 1 lime

Head of Romaine - finely chopped

1 tomato - finely chopped

Favourite Taco Topping (toffui sour cream, mango salsa etc)

Favorite taco seasoning


Instructions:

  1. Cut corn off cob 
  2. Chop onion and green pepper 
  3. Put onion, corn and green pepper in a bowl with garlic 
  4. Turn frying pan on medium-high 
  5. When frying pan is hot add half a cup of water 
  6. Place bowl of veggies in frying pan stir for about 5 to 7 minutes 
  7. Add chili beans do not rinse, mix together 
  8. Add juice one lime into the frying pan 
  9. Add favorite taco seasoning 
  10. Turn heat down to low and let simmer for 10 minutes while stirring occasionally 
  11. Shred romaine lettuce and chop tomato 
  12. Fill taco shell with bean and corn mixture, top with lettuce and tomato, top it off with favourite taco toppings
  13. Enjoy!
